Ingredients
- 6 slices bacon, cut crosswise into strips
- 1 flat-cut boneless beef brisket, seasoned with salt and black pepper
- 3 medium yellow onions, peeled and sliced
- 2 10 ½ oz (315 ml) each)) cans condensed beef consome, undiluted
Method
Step 1
In a large nonstick skillet, cook bacon strips over medium-high heat for about 3 minutes. Using a slotted spoon, transfer cooked bacon to the slow cooker.
Step 2
Add beef brisket and sear in hot bacon fat on all sides, turning once. Transfer seared beef to a slow cooker.
Step 3
Reduce heat to medium. Add sliced onions to the same skillet. Cook, stirring until softened (for about 3-5 minutes). Turn off heat. Using a slotted spoon, transfer cooked onions to the slow cooker.
Step 4
Pour in beef consommé. Cover slow cooker and cook on low-heat setting for 6-8 hours.
Step 5
Turn off the slow cooker. Transfer cooked brisket to cutting board. Allow it to cool for 10 minutes. Slice meat against the grain into thin slices. A place to a servingplatter. Season with more salt and black pepper, if desired.
Step 6
Spoon bacon-onion mixture over beef. Serve immediately.
