To be honest with you, this recipe was one of my older sister’s favorite dishes. The meat is cooked until tender and juicy and the sweet taste of caramelized onion complements the smoky flavor of beef beautifully. The vegetables in this dish are also cooked until they are tender (but not overcooked), which means that they will retain their flavor as well as their nutrients.

I typically make this dish on the weekends when I have more time to cook because it takes at least six hours to cook in the slow cooker. But if you’re looking for something easier, you can always use a pressure cooker or make it on the stovetop.

Ingredients

  • 2 tablespoons unsalted butter
  • 4 cups pearl onions
  • 2 teaspoons sugar
  • 2 teaspoons fresh thyme leaves
  • 1½ pounds (420 g) beef stew meat, sliced
  • 1 cup (250 ml) beef flavored broth
  • 1 package (0.87 oz) onion gravy mix
  • 1 cup sliced carrots

Method

Step 1

In a large nonstick skillet, melt the butter over medium-high heat. Add onions and sugar and cook, stirring occasionally, until onions are deep golden brown and caramelized. Stir in stewing meat and thyme.

Step 2

Remove the onion mixture from the skillet and transfer it to a slow cooker. In a medium mixing bowl, combine the beef broth and gravy mix. Mix well and pour over the meat mixture in the cooker. Top with sliced carrots potatoes.

Step 3

Cover the pot and cook in a low-heat setting for 8-9 hours, or until beef and vegetables are tender. Serve hot.
