Slow Cooker Balsamic Brussels Sprouts Recipe

Ingredients

  • 1/2 cup (125 ml) balsamic vinegar
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup crumbled blue cheese
  • 2 tablespoons brown sugar
  • 2 pounds (960 g) brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • kosher salt and freshly ground black pepper
  • 2 tablespoons unsalted butter, cubed

Method

Step 1

Heat a small saucepan over medium heat. Add balsamic vinegar and brown sugar. Bring to a boil, stirring occasionally, until reduced by half. Remove the saucepan from the heat and set aside.

Step 2

Place brussels sprouts in 3-4-quart (3-4 L) slow cooker. Stir in the olive oil, then season with salt and black pepper. Top with cubed butter.

Step 3

Cover the pot and cook on low-heat setting for 3-4 hours.

Step 4

Turn off the cooker and open the lid. Remove cooked Brussels sprouts from the slow cooker and transfer to a serving plate.

Step 5

Sprinkle with cooked crumbled bacon and blue cheese. Serve immediately. Enjoy!
