Slow Cooker Easy Cassoulet Soup Recipe
Ingredients
- 1/2 pound chicken drumsticks
- 1 cupo (250 ml) chopped yellow onion
- 3 cloves garlic, peeled and minced
- 7 oz (210 ml) can cannellini beans, rinsed and drained
- 7 oz (210 ml) can red kidney beans, rinsed and drained
- 1/2 pound (240 g) cooked smoked turkey sausages, sliced
- 1½ cups (375 ml) chicken broth
- 1/2 cup (125 ml) dry white wine
- 1 tablespoon snipped fresh parsley
- 1 teaspoon dried thyme
- 1 bay leaf
Method
Step 1
In a 5-quart (5 L) slow cooker, combine onion, garlic, beans, chicken drumstick, and sausages. Stir well.
Step 2
Add chicken broth, dry white wine, parsley, thyme, and bay leaf. Mix well to combine.
Step 3
Cover the pot and cook on low-heat setting for 7-8 hours.
Step 4
Turn off the cooker and open the lid. Discard bay leaf. Ladle the soup into soup bowls. Serve hot.
