What is Beef Caldereta?

Beef caldereta is a popular Filipino dish that is known for its rich and savory flavor. It is a stew made with tender beef, potatoes, carrots, bell peppers, and tomato sauce. The dish is traditionally cooked on the stovetop, but it can also be made in a slow cooker for a more convenient and hands-off approach.

The key to a delicious beef caldereta is the combination of spices and ingredients that give it a unique taste and aroma. It is a perfect meal for any occasion and can be served with rice or bread.

Ingredients Needed for Beef Caldereta

To make this dish, you will need a few key ingredients. The star of the dish is, of course, beef. You’ll want to use a tough cut of beef that can withstand long cooking times without becoming too dry or tough. Beef chuck roast or stew meat are good options.

In addition to the beef, you’ll need a variety of vegetables to give the dish its signature flavor. This typically includes onions, garlic, tomatoes, and bell peppers. You may also want to add potatoes and carrots for some extra heartiness.

To give the dish its distinctive taste, you’ll need a few key spices and seasonings. These may include bay leaves, paprika, cumin, and chili flakes. You’ll also need soy sauce and tomato paste to help create the rich, savory sauce that makes this dish so delicious.

Finally, you’ll need some broth or stock to help cook everything together in the slow cooker. Beef broth is a great option, but you could also use chicken or vegetable broth if you prefer.

With these ingredients on hand, you’re ready to start making your own beef caldereta dish!

Steps to Make Slow Cooker Beef Caldereta

To make beef caldereta, you will need to follow a few simple steps. First, heat some oil in a pan and sauté garlic and onion until fragrant. Then, add the beef and cook until browned on all sides. Transfer the beef to the slow cooker.

Next, add tomato sauce, beef broth, soy sauce, vinegar, bay leaves, and sugar to the slow cooker. Stir everything together until well combined. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.

After the cooking time is up, remove the bay leaves and stir in some potatoes, carrots, and bell peppers. Cover the slow cooker again and cook on high for an additional hour or until the vegetables are tender.

Finally, serve the slow cooker beef caldereta hot with steamed rice and garnish with chopped cilantro or green onions if desired. Enjoy this delicious and easy-to-make Filipino dish!

Serving Suggestions and Tips for Cooked Beef Caldereta

To fully enjoy the delicious flavors of Philipino caldereta, here are some serving suggestions and tips that you can follow.

Firstly, it is best to serve this dish with steamed rice or mashed potatoes. The creamy and savory sauce of the beef caldereta complements well with the neutral taste of rice or mashed potatoes.

If you want to add some crunch to your meal, you can also serve it with toasted bread or garlic bread. The bread will help absorb the flavorful sauce and give you a satisfying texture.

For those who love spicy food, you can add some chili flakes or hot sauce to your slow cooker beef caldereta. This will give an extra kick to the already flavorful dish.

Lastly, if you have leftovers, you can store them in an airtight container and refrigerate them for up to 3 days. You can reheat it in the microwave or on the stove, but make sure to add a little bit of water or broth to prevent the meat from drying out.

With these serving suggestions and tips, you can surely enjoy your slow cooker beef caldereta to the fullest.

Slow Cooker Beef Caldereta

Ingredients

  • 2 pounds (960 g) beef chuck roast, chunked
  • 2 tablespoons cooking oil
  • 3 garlic cloves, peeled and crushed
  • 1 large yellow onion, peeled and sliced
  • 2 plum tomatoes, chopped
  • 2 carrots, peeled and sliced
  • 4 potatoes, peeled and cubed
  • 2 bay leaves
  • 1 cup (250 ml) beef broth
  • 1 tablespoon soy sauce
  • 1/2 cup (125 ml) tomato sauce
  • 1/2 cup (125 ml) peanut sauce
  • 1 red bell pepper, seeded and sliced
  • 1 green bell pepper, seeded and sliced
  • 1 cup frozen peas
  • 2 teaspoons brown sugar
  • salt and freshly ground black pepper, to taste

Method

Step 1

Season the beef with salt and black pepper and set it aside.

Step 2

In a large nonstick skillet, heat the olive oil over medium-high heat. Add the seasoned beef and sear on all sides.

Step 3

Remove seared beef from the skillet and transfer it to a large plate. Use the remaining oil to saute the garlic, onions, and tomatoes.

Step 4

Place seared beef and sauteed vegetables in a slow cooker. Add the carrots, potatoes, and bay leaves. Pour the beef broth, soy sauce, and tomato sauce over the beef and vegetables. Stir well.

Step 5

Cover the pot and cook on a low-heat setting for 6-8 hours, or until beef and vegetables are tender.

Step 6

When it's tender enough to eat, but not falling apart, add the peanut butter, bell peppers, and frozen peas. If desired, add a pinch of sugar to enhance the flavor. Add a bit of extra salt and pepper if needed. Stir everything together until mixed well. Cook for about 30 minutes to 1 hour until everything is hot. Serve hot.
