Slow Cooker Beef in Beer
Ingredients
- 6 potatoes, peeled and quartered
- 3 onions, peeled and quartered
- 3-4 pounds (1,4-1,7 kg) corned beef brisket, fat removed
- 1 cup (250 ml) ginger beer
- 1/2 cup prunes
Method
Step 1
Combine onions, potatoes, and prunes in slow cooker. Arrange beef atop vegetables. Pour beer over all. Cover and cook on low heat for 9-11 hours.
Step 2
Turn off the cooker and open the lid. Using tongs, remove cooked beef from the pot. Transfer to a cutting board. Cut into cubes.
Step 3
Return cubed meat to the slow cooker and stir well. Serve hot.
