Slow Cooker Spicy Beef and Vegetable Stew Recipe
Makes 12 servings
Ingredients: 3 tablespoons (45 ml) vegetable oil, 1 pound (480 g) ground lean beef, 1 cup (250 ml) chopped yellow onions, 30 oz (900 ml) jar meatless spaghetti sauce, 3½ cups (765 ml) water, 1 pound (480 g) frozen mixed vegetables, thawed, 10 oz (300 ml) can diced tomatoes with green chilies, 1 cup (250 ml) sliced celery, 1 teaspoon beef bouillon granules, 1 teaspoon freshly ground black pepper
Instructions: Heat vegetable oil in a large nonstick skillet over medium-high heat. Add ground beef and onion and cook, stirring occasionally, until meat is no longer pink. Drain the beef mixture and transfer to slow cooker.
Stir in remaining ingredients. Cover cooker and cook on low-heat setting for 8 hours. Turn off the slow cooker and open the lid. Stir beef stew well, add seasoning if needed. Pour into soup bowls. Serve hot.
Slow Cooker Forgotten Minestrone Stew Recipe
Makes 8 servings
Ingredients: 1 pound (480 g) beef stewing meat, 6 cups (1.5 L) water, 28 oz (840 ml) can tomatoes, diced and undrained, 1 beef bouillon cube, 1 medium yellow onion, peeled and chopped, 2 tablespoons (30 g) minced dried parsley, 1½ teaspoon each: salt and dried thyme, 1/2 teaspoon freshly ground black pepper, 1 medium zucchini, thinly sliced, 2 cups finely chopped cabbage, 16 oz (480 ml) can garbanzo beans, drained, 1 cup uncooked small elbow macaroni, 1/4 cup grated Parmesan cheese
Instructions: In a 6-quart (6 L) slow cooker, combine beef, water, tomatoes, beef bouillon cube, onion, parsley, thyme, and black pepper. Cover cooker and cook on low-heat setting for 7-9 hours, or until beef is tender.
Stir in sliced zucchini, cabbage, beans, and uncooked macaroni. Increase heat to high, cover and cook for a further 45 minutes, or until vegetables are tender. Transfer cooked beef stew to soup bowls. Sprinkle with grated Parmesan cheese. Serve immediately.

Ingredients
- 2 pounds (960 g) stewing meat, cubed
- 2 medium yellow onions, peeled and diced
- 2 cups sliced carrots
- 4 madium potatoes, peeled and diced
- 2 1/2 tablespoons quick-cooking tapioca
- 1 tablespoons granulated sugar
- 10 ¾ oz (325 ml) ) can tomato soup
- 1 ½ soup cans water
Method
Step 1
Layer meat and vegetables in slow cooker. Sprinkle with tapioca, sugar, salt, and freshly ground black pepper.
Step 2
In a mixing bowl, combine tomato soup and water. Mix well and pour mixture into slow cooker(do not stir).
Step 3
Cover slow cooker and cook on low-heat setting for 6-8 hours.
