Slow Cooker Middle Eastern Beef and Bean Stew Recipe

A very easy and delicious stew with sweet spices which give flavor accents it.

Makes 8 servings


Ingredients: 1 pound (480 g) lean beef stew meat, cut into cubes, 1 cup dried Great Northern beans, 4 cups (1 L) reduced-sodium fat-free beef broth, 2 cups chopped yellow onions, 2 cloves garlic, peeled and minced, 2 bay leaves, 1/2 teaspoon ground cinnamon, 1/8 teaspoon ground cloves, 1½ cups diced tomatoes, 1¼ cups cooked white rice, salt and freshly ground black pepper, to taste

Instructions: In a 6-quart (6 l) slow cooker, combine all ingredients, except rice, tomatoes, and seasoning. Cover the cooker and cook on low-heat setting for 7-8 hours or until beans are tender adding tomatoes and rice during the last 30 minutes.

Turn off slow cooker and open the lid. Discard bay leaves. Season to taste with salt and black pepper. Stir well. Ladle beef stew into soup bowls and serve hot.

Slow Cooker Simple Mushroom Beef stew Recipe

Ingredients

  • 2 pounds (960 g) stewing beef, cubed
  • 1 can (10 ¾ oz (355 ml)) condensed cream of mushroom soup
  • 4 oz (120 ml) can mushrooms
  • 1 envelope dry onion soup mix
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 a soup can of water

Method

Step 1

Sprinkle bottom of greased slow cooker with ¼ of dry soup mix. Layer in meat, mushroom soup, canned mushrooms, and remaining dry onion soup mix. Pour water over.

Step 2

Cover slow cooker and cook on low-heat setting for 8 hours. Serve over cooked rice, mashed potatoes or noodles.
