Slow Cooker Beef Tajine Recipe

Ingredients

  • 2 pouns beef chuck roast, trimmed and cubed
  • 1 tablespoon salt
  • 1 tablespoon unsalted butter
  • 2 fresh tomatoes, sliced
  • 2 tablespoons honey
  • 1 tablespoon harissa paste
  • 1 tablespoon tablespoon ras el hanout (Moroccan seasoning blend)
  • 1/2 teaspoon ground cinnamon
  • 1/2 pound dried apricots, sliced
  • 1 cup thinly sliced yellow onion
  • 1/4 cup chopped dates
  • 3 cloves garlic, peeled and chopped
  • 2 cups uncooked rice
  • 1 yellow bell pepper, cored, seeded ,and slice
  • 1/4 cup toasted sesame seeds
  • 1/4 cup chopped fresh cilantro leaves

Method

Step 1

Lightly grease a 5-quart 95 l) slow cooker with nonstick cooking spray.

Step 2

Season cubed with salt and mix well. In a large nonstick skillet, melt the butter over medium-high heat. Add seasoned meat and cook, stirring occasionally, until browned. Remove cooked beef from the skillet and transfer to the slow cooker.

Step 3

In a large mixing bowl, combine tomatoes, honey, harissa, ras el hanout seasoning, and ground cinnamon. Mix well, then stir in dried apricots, yellow bell pepper, onion, garlic, and dates. Pour the honey mixture over the beef in the slow cooker.

Step 4

Close the pot and cook on low-heat setting for 7-9 hours or until bee and vegetables are tender.

Step 5

Turn off the slow cooker and open the lid. Remove the cooked beef and vegetables from the cooker and transfer to a serving plate.

Step 6

Cook the rice according to package instruction. Drain and transfer to a serving plate. Serve beef tajine over the cooked rice sprinkled with chopped fresh cilantro and sesame seeds.
