Dried white beans cook perfectly in the slow cooker and donโ€™t need to soak or pre-cook.

Makes 6 servings

Ingredients: 1 pound (480 g) boneless lamb shoulder, cut into cubes, 8 oz (240 g) dried white beans (such as navy, Great Northern, or cannellini), 2 cups (500 ml) low-sodium fat-free chicken broth, 8 oz (240 g) reduced-fat smoked sausage, sliced, 1/2 cup (125 ml) dry white wine, 1 cup (250 ml) chopped yellow onion, 3 carrots, peeled and sliced, 1 clove garlic, peeled and minced, 3/4 teaspoon dried rosemary leaves, 3/4 teaspoon dried oregano leaves, 1 bay leaf, 16 oz (480 ml) can diced tomatoes, undrained, salt, and freshly ground black pepper, to taste

Instructions: In a 6-quart (6 L) slow cooker, combine all ingredients, except canned tomatoes, and seasoning. Cover the cooker and cook on low-heat setting for 7-8 hours, or until beans are tender, adding undrained tomatoes during last 30 minutes.

Turn off the slow cooker and open the lid. Discard bay leaf. Season to taste with salt and black pepper. Stir well. Transfer stew to serving plates. Serve hot.

Ingredients

  • 2 pounds (960 g) whole baby potatoes, peeled and halved
  • 2 tablespoons olive oil, plus some extra
  • 1 pound (480 g) bratwurst sausages
  • 1 medium yellow onion, peeled and sliced
  • 1 yellow banana pepper, sliced
  • 1 pound green beans
  • 1/4 cup chopped fresh parsley
  • 1/2 cup (125 ml) low-sodium fat-free chicken broth

Method

Step 1

In a large nonstick skillet, heat olive oil over medium heat. Add sausages and brown on all sides. Remove browned sausages from the skillet, transfer to a cutting board, and slice into chunks.

Step 2

Place whole baby potatoes in a 4-quart (4 L) slow cooker. Drizzle with 2 tablespoons olive oil. Toss well. Add browned sausages, then top with sliced onion and banana pepper. Add sliced green beans and pour in chicken broth.

Step 3

Cover slow cooker and cook on low-heat setting for 8-10 hours or until potatoes are tender.

Step 4

Turn off the slow cooker and open the lid. Stir in chopped fresh parsley. Transfer sausage mixture to serving plates. Serve hot.
