Slow Cooker Whole-Grain Banana Bread Recipe
Very popular whole-grain banana bread cooked in 4½-quart (4½ l) slow cooker. This is one of my favorite desserts!
Ingredients: 1/4 cup plus 2 tablespoons wheat germ, divided, 2/3 cup unsalted butter, softened, 1 cup granulated sugar, 2 large eggs, 1 cup mashed ripe bananas (2-3 bananas), 1 teaspoon vanilla, 1 cup all-purpose flour, 1 cup whole wheat pastry flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1/2 cup chopped walnuts
Instructions: Grease 1-quart (1L) baking dish with nonstick cooking spray; sprinkle with 2 tablespoons wheat germ.
In a large mixing bowl, combine unsalted butter and sugar. Using an electric mixer, beat until fluffy. Add eggs, one at a time and beat until well blended. Stir in bananas and vanilla. Beat until smooth.
Stir in all-purpose and whole wheat pastry flour, remaining 1/4 cup wheat germ, baking soda, chopped walnuts, and salt. Pour batter into greased baking dish. Place it in 4½-quart (4½ L) slow cooker.
Cover cooker and cook on low-heat setting for 4-6 hours or until a toothpick inserted in the center of banana bread comes out clean.
Turn off and open the slow cooker. Remove dish and cool on wire rack for about 10 minutes. Remove baked banana bread from the dish and cool completely on wire rack.
Slow Cooker Broccoli Corn Bread Recipe
- 1 stick margarine, melted
- 10 oz (300 g) package chopped broccoli, cooked and drained
- 1 yellow onion, peeled and chopped
- 1 box corn bread mix
- 4 large eggs, beaten
- 8 oz (240 g) cottage cheese
- 1 ¼ teaspoon salt
Grease slow cooker with nonstick cooking spray.
In a mixing bowl, combine all ingredients. Mix well.
Pour mixture into slow cooker. Cover and cook on low-heat setting for 6 hours or until a toothpick inserted in the center comes out clean.
Serve like spoon bread, or invert the pot, remove broccoli cornbread, and cut into wedges.
