Slow cooker broccoli cornbread recipe.
Very healthy and delicious bread cooked in a slow cooker. A slow cooker provides enough warmth to a raised dough. You may also like to bake Whole-Grain Banana Bread in the slow cooker.
Slow Cooker Whole-Grain Banana Bread Recipe
Very popular whole-grain banana bread cooked in a 4½-quart (4½ l) slow cooker. This is one of my favorite desserts!
Ingredients: 1/4 cup plus 2 tablespoons wheat germ, divided, 2/3 cup unsalted butter, softened, 1 cup granulated sugar, 2 large eggs, 1 cup mashed ripe bananas (2-3 bananas), 1 teaspoon vanilla, 1 cup all-purpose flour, 1 cup whole wheat pastry flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1/2 cup chopped walnuts
Instructions: Grease 1-quart (1L) baking dish with nonstick cooking spray; sprinkle with 2 tablespoons wheat germ.
In a large mixing bowl, combine unsalted butter and sugar. Using an electric mixer, beat until fluffy. Add eggs, one at a time, and beat until well blended. Stir in bananas and vanilla. Beat until smooth.
Stir in all-purpose and whole wheat pastry flour, remaining 1/4 cup wheat germ, baking soda, chopped walnuts, and salt. Pour batter into greased baking dish. Place it in a 4½-quart (4½ L) slow cooker.
Cover the cooker and cook on a low-heat setting for 4-6 hours, or until a toothpick inserted in the center of banana bread comes out clean.
Turn off and open the slow cooker. Remove the dish and cool on a wire rack for about 10 minutes. Remove the baked banana bread from the dish and cool completely on a wire rack.
Slow Cooker Broccoli Corn Bread Recipe
- 1 stick margarine, melted
- 10 oz (300 g) package chopped broccoli, cooked and drained
- 1 yellow onion, peeled and chopped
- 1 box corn bread mix
- 4 large eggs, beaten
- 8 oz (240 g) cottage cheese
- 1 ¼ teaspoon salt
Grease the slow cooker with nonstick cooking spray.
In a mixing bowl, combine all ingredients. Mix well.
Pour the mixture into the slow cooker. Cover and cook on a low-heat setting for 6 hours, or until a toothpick inserted in the center comes out clean.
Serve like spoon bread, or invert the pot, remove broccoli cornbread, and cut into wedges.
