Ingredients
- 4 tablespoons unsalted butter at room temperature
- 1/4 cup (60 ml) applesauce
- 2 large eggs,beaten
- 2 tablespoons 2% reduced-fat milk
- 3/4 cup light brown sugar
- 1 cup mashed ripe bananas
- 1¾ cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup coarsely chopped walnuts
Method
Step 1
In a large mixing bowl,combine butter,applesauce,eggs,milk and brown sugar. Beat well.
Step 2
Add mashed bananas and Stir in combined flour,baking powder,baking soda and salt.
Stir in chopped walnuts. Pour batter into greased loaf pan.
Place pan on rack in slow cooker. Cover slow cooker and cook on high heat setting until toothpick inserted in the center comes out clean (for 2-3 hours). Turn off slow cooker.
Cool brown sugar banana bread on wire rack 5 minutes.
Remove bread from pan and cool completely on wire rack.
