Slow Cooker Fix-and-Forget-Paella Recipe

Chicken thighs and drumsticks with vegetables, shrimp, and ham cooked in the slow cooker and served over cooked rice.

Ingredients: 2 medium-size carrots, peeled and cut into pieces, 1 large yellow onion, peeled and coarsely chopped, 1 bay leaf, 3 pounds (1.44 kg) skinless, bone-in chicken thighs and drumsticks, 1 cup (250 ml) cubed cooked ham, 14½ oz (453 ml) can stewed tomatoes, cut up, 6 oz (180 ml) can tomato paste, 2 teaspoons instant chicken bouillon granules, 2 cloves garlic, peeled and chopped, 1/4 teaspoon freshly ground black pepper, 1 pound shelled and deveined shrimp, 1 cup frozen peas, thawed and drained, 2 cups (500ml) water, 1 cup long-grain rice, 1/4 teaspoon salt, dash ground saffron

Instructions: In 5-quart (5 L) slow cooker, combine carrots, chopped onion and bay leaf. Top with chicken pieces and cubed ham.

In a medium-size mixing bowl, combine tomatoes with their juice, tomato paste, bouillon granules, garlic, and black pepper. Mix well and pout tomato mixture over chicken in the slow cooker.

Cover cooker and cook on low-heat setting for 8-9 hours. Increase heat to high. Open the lid and stir shrimp and peas into chicken mixture in the slow cooker. Cover cooker and cook for further 20 minutes or until shrimp are pink.

In a medium-size saucepan, combine the water, uncooked rice, salt, and ground saffron. Bring to a boil over medium-high heat. Cover and simmer for 15 minutes. Remove pot from the heat. Let stand, covered, for 10 minutes. Fluff cooked rice with a fork.

Turn slow cooker off and open the lid. Discard bay leaf. Using a slotted spoon, transfer chicken mixture to a serving platter, reserving cooking liquid in the slow cooker. Serve chicken mixture with cooked rice and drizzle with reserved cooking liquid to moisten.

Slow Cooker Buffalo Chicken Drumsticks Recipe

Ingredients

  • 16 chicken drumsticks
  • 1 bottle (16 oz (480 ml) Buffalo wing hot sauce
  • 1/4 cup (60 ml) tomato paste
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 cup (250 ml) sour cream
  • 1/2 cup (125 ml) mayonnaise
  • 1/2 cup (125 ml) crumbled blue cheese
  • 1/4 teaspoon cayenne pepper

Method

Step 1

Place chicken drumsticks in a 4-5-quart (4-5 L) slow cooker.

Step 2

In a medium mixing bowl, combine hot sauce, tomato paste, apple cider vinegar, and Worcestershire sauce. Mix well and pour over chicken.

Step 3

Cover slow cooker and cook on low heat setting for 6-8 hours or until chicken drumsticks are cooked through.

Step 4

In a small mixing bowl, combine sour cream, mayonnaise, blue cheese, and cayenne pepper. Stir well and refrigerate until ready to use.

Step 5

Turn slow cooker off and open the lid. Using a slotted spoon, remove cooked chicken from the slow cooker. Siim fat from cooking liquid. Serve chicken with some of the cooking liquid and blue cheese mixture.
