  • 1/2 pound (240 g) andouille sausage, sliced
  • 2 cans (14½ oz (435 ml)) each diced tomatoes, undrained
  • 1 medium yellow onion, peeled and finely chopped
  • 1 rib celery, sliced
  • 1 teaspoon Cajun seasoning
  • 2 cloves garlic, peeled and minced
  • 1/4 teaspoon hot pepper sauce
  • 1 bay leaf
  • 2 cans (14 oz (420 ml)) each chicken broth
  • 3/4 pound (360 g) shrimp, shelled and deveined
  • 3/4 cup (180 g) instant rice
  • 1 tablespoon chopped fresh parsley

Method

Step 1

In a 4-quart (4 L) slow cooker, combine sliced sausages, undrained tomatoes, onion, celery, Cajun seasoning, garlic, hot pepper sauce, and bay leaf. Mix well, then pour the chicken broth over.

Step 2

Cover the pot and cook on low-heat setting for 6-8 hours. Meanwhile, cook the rice according the packing instruction. Drain and set aside.

Step 3

Increase heat to high. Stir shrimp into the slow cooker. Cover slow cooker and cook for a further 5-10 minutes or until shrimp turns pink.

Step 4

Turn off the cooker and open the lid. Discard bay leaf. Mix soup well before serving. Transfer to a large serving bowl. Place cooked rice in the center of the bowl. Serve hot.
