Slow cooker cheesy chicken spaghetti recipe. Chicken breasts with spices, Cheddar cheese, and vegetables cooked in a slow cooker.

Slow Cooker Chicken Casablanca Recipe

Makes 6-8 servings

Ingredients: 2 tablespoons (30 ml) cooking oil, 2 large yellow onions, peeled and sliced, 1 teaspoon (5 ml) ground ginger, 3 garlic cloves, peeled and minced, 3 large carrots, peeled and diced, 3 pounds (1.44 kg) skinless chicken pieces, 2 large potatoes, peeled and diced, 1 teaspoon (5 ml) ground cumin,, 1/2 teaspoon (3 ml) salt, 1/2 teaspoon (3 ml) freshly ground black pepper, 1/4 teaspoon (1 ml) ground cinnamon, 2 tablespoons (30 ml) seedless raisins, 14½ oz (435 ml) can chopped tomatoes, undrained, 3 small zucchini, sliced, 15 oz (450 ml) can garbanzo beans, drained, 2 tablespoons (30 ml) chopped fresh parsley

Instructions: In a large nonstick skillet, heat cooking oil over medium heat.  Add sliced onions, ground ginger, and minced garlic and saute, stirring occasionally, for 2-3 minutes. Remove vegetable mixture from the skillet, reserving cooking oil, and transfer to the slow cooker. Stir in diced potatoes and carrots.

Add skinless chicken pieces to the skillet with reserved cooking oil. Cook, stirring occasionally until browned, then removed cooked meat from the skillet and transfer to the slow cooker. Mix gently with vegetables.

In a small mixing bowl, combine seasoning. Mix well and sprinkle over chicken and vegetables. Stir in raisins and undrained tomatoes. Cover cooker and cook on high-heat setting for 4-6 hours. Open the lid and stir in sliced zucchini, drained garbanzo beans, and chopped fresh parsley. Cover slow cooker and cook for further 30 minutes.

Turn off the slow cooker and open the slow cooker. Mix the chicken-vegetable mixture well before serving. Serve over cooked rice or couscous. Enjoy it!

Slow Cooker Cheesy Chicken Spaghetti Recipe

Ingredients

  • 1/2 cup diced yellow onion
  • 1/2 red bell pepper, cored, seeded and diced
  • 1/2 green bell pepper, cored, seedeed and diced
  • 1 small can mild green chiles, drained and diced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • salt and freshly ground black pepper, to taste
  • 2 boneless and skinless chicken breasts
  • 14½ oz (435 ml) can can cream of mushroom soup
  • 1 pound (480 g) cooked spaghetti
  • 3 cups grated Cheddar cheese
  • chicken stock

Method

Step 1

In a 4-6-quart (4-6 L) slow cooker, combine onion, bell peppers, green chiles, ground cumin, garlic powder, salt, black pepper, chicken breasts, cream of mushroom soup, and 1 cup grated Cheddar cheese. Mix well.

Step 2

Cover slow cooker and cook on high-heast setting for 3-4 hours, or until chicken is tender. Using tongs, remove cooked chicken breasts from slow cooker nad transfer to a cutting board. Shred and return to the slow cooker. Stir in cooked spaghetti and remaining Cheddar cheese. Toss to coat spaghetti in sauce and melt cheese, adding in a few splash of chicken stock.

Step 3

Cover slow cooker and cook ion low-heat setting for further 30 minutes.

Step 4

Turn off the slow cooker and open the lid. Stir well chicken-spaghetti mixture before serving. Transfer to a serving plate. Serve hot.
