- 4 cups (1 L) clam juice
- 1½ pounds (720 ml) canned oysters, liquor reserved
- 2/3 cup chopped yellow onion
- 1/2 cup (125 ml) dry white wine
- 2 tablespoons cornstarch
- salt anfd cayenne pepper, to taste
In a 6-quart (6 L) slow cooker, combine clam juice, reserved oyster liquor, and onion. Mix well.
Cover the pot and cook in a high-heat setting for 2-3 hours. Open the lid and stir in combined wine and cornstarch. Recover the cooker and cook for a further 15 minutes.
Season to taste with salt and cayenne pepper. Ladle the soup into soup bowls. Serve hot.
