Ingredients
- 1 pound (480 g) chicken livers
- 1/4 cup finely chopped yellow onion
- 1 small apple, peeled, cored, and finely chopped
- 2-4 tablespoons brandy
- 1/2 cup unsalted butter at room temperature
- salt and cayenne pepper, to taste
Method
Step 1
In a slow cooker, combine chicken livers, chopped onion, and apples. Mix well.
Step 2
Cover the pot and cook on high heat setting for 3 hours.
Step 3
Turn off the cooker and open the lid. Remove the chicken mixture from the pot and transfer to a blender or food processor. Process until very smooth, adding unsalted butter 2 tablespoons at the time. Season to taste with salt and cayenne pepper. Cover and refrigerate until chilled.
