I have a great way to make homemade chicken taco bowls that are super yummy and super easy! All you have to do is put it in the slow cooker and let the flavors come together. You can use the chicken in lots of different meals – like tacos, salads, rice bowls, or even in Mexican-style pasta or enchiladas and burritos.

To make slow cooker chicken taco bowls, you need ground chicken, onion, bell peppers, zucchini, taco seasoning, diced tomatoes with green chilies, shredded cheddar cheese, and cilantro.

Ground chicken is the main source of protein and gives the bowls flavor. Onion adds a savory and sweet taste. Bell peppers make the dish crunchy and give it nutrients like vitamins A and C. Zucchini also adds flavor and tenderness.

Taco seasoning blends spices like chili powder, cumin, paprika, and garlic powder to make it taste like a classic taco.

Ingredients: 1 tablespoon (15 ml) extra-virgin olive oil, 4 boneless and skinless chicken breasts, cut into1-inch (2.5 cm) strips, kosher salt, and freshly ground black pepper, to taste, 2 teaspoons (10 ml) chili powder, 2 teaspoons (10 ml) ground cumin, 1/2 teaspoon (3 ml) garlic powder, 1/4 teaspoon (1 ml) paprika, 1/4 teaspoon (1 ml) cayenne pepper, 8 corn tortillas, warmed

For Toppings: 1 large red onion, peeled and thinly sliced, 1 tomato, diced, shredded Monterey Jack cheese, 1 ripe avocado, peeled, pitted, and diced, fresh cilantro, lime wedges

Instructions: In a large nonstick skillet, heat extra-virgin olive oil over medium heat. Season chicken breasts with salt and black pepper.

Add seasoned meat to the skillet and cook until golden, turning once, for about 6 minutes. Add spices and stir well to coat. Continue cooking for a further 3 minutes.

In warmed tortillas, layer fried chicken and desired toppings. Sprinkle with chopped fresh cilantro. Serve with lime wedges.

Grilled Chicken Taco Recipe

Ingredients: 1 medium yellow onion, peeled and cut into wedges, 2 garlic cloves, peeled and finely chopped, 1 pound (480 g) boneless and skinless chicken thighs, 1 tablespoon (15 ml) crushed cumin seeds, 1 tablespoon (15 ml) vegetable oil, 1 teaspoon (5 ml) kosher salt, 1/2 teaspoon (3 ml) freshly ground black pepper, 8 corn tortillas, warmed, 2 ripe avocados, peeled, pitted and sliced, charred tomatillo salsa verde, fresh cilantro sprigs, sliced radishes, and lime wedges

Instructions: Preheat the grill to medium-high heat. In a medium mixing bowl, combine onion, garlic, chicken, cumin, oil, salt, and black pepper. Toss well. Grill chicken-onion mixture, turning occasionally until cooked through and lightly charred, for about 8 minutes.

Remove cooked chicken and onion from the grill and transfer to a cutting board. Let cooked chicken rest for 5 minutes before slicing. Serve chicken taco with tortillas, avocados, charred tomatillo salsa verde, cilantro, radishes, and lime wedges.

Ingredients

  • 1 pound (480 g) ground chicken
  • 1 large yellow onion, peeled and diced
  • 2 bell peppers, cored, seeded and diced
  • 1 zucchini, diced
  • 2 tablespoons taco seasoning
  • 8 oz (240 ml) diced tomatoes with green chilies
  • 1/2 cup (125 ml) shredded Cheddar cheese
  • chopped fresh cilantro

Method

Step 1

In a 4-6-quart (4-6 l) slow cooker, combine diced vegetables, ground chicken, and taco seasoning. Stir well.

Step 2

Cover the pot and cook on a low-heat setting for 4 hours or until chicken is cooked through.

Step 3

Turn off the slow cooker and open the lid. Stir chicken mixture well before serving.

Step 4

Top with shredded Cheddar cheese. Sprinkle with chopped fresh cilantro. Serve immediately.
