Fried Chicken Taco Recipe
Makes 4 servings
Ingredients: 1 tablespoon (15 ml) extra-virgin olive oil, 4 boneless and skinless chicken breasts, cut into1-inch (2.5 cm) strips, kosher salt and freshly ground black pepper, to taste, 2 teaspoons (10 ml) chili powder, 2 teaspoons (10 ml) ground cumin, 1/2 teaspoon (3 ml) garlic powder, 1/4 teaspoon (1 ml) paprika, 1/4 teaspoon (1 ml) cayenne pepper, 8 corn tortillas, warmed
For Toppings: 1 large red onion, peeled and thinly sliced, 1 tomato, diced, shredded Monterey Jack cheese, 1 ripe avocado, peeled, pitted, and diced, fresh cilantro, lime wedges
Instructions: In a large nonstick skillet, heat extra-virgin olive oil over medium heat. Season chicken breasts with salt and black pepper.
Add seasoned meat to the skillet and cook until golden, turning once, for about 6 minutes. Add spices and stir well to coat. Continue cooking for a further 3 minutes.
In warmed tortillas, layer fried chicken and desired toppings. Sprinkle with chopped fresh cilantro. Serve with lime wedges.
Grilled Chicken Taco Recipe
Makes 4 servings
Ingredients: 1 medium yellow onion, peeled and cut into wedges, 2 garlic cloves, peeled and finely chopped, 1 pound (480 g) boneless and skinless chicken thighs, 1 tablespoon (15 ml) crushed cumin seeds, 1 tablespoon (15 ml) vegetable oil, 1 teaspoon (5 ml) kosher salt, 1/2 teaspoon (3 ml) freshly ground black pepper, 8 corn tortillas, warmed, 2 ripe avocados, peeled, pitted and sliced, charred tomatillo salsa verde, fresh cilantro sprigs, sliced radishes, and lime wedges
Instructions: Preheat the grill at medium-high heat. In a medium mixing bowl, combine onion, garlic, chicken, cumin, oil, salt, and black pepper. Toss well. Grill chicken-onion mixture, turning occasionally until cooked through and lightly charred, for about 8 minutes.
Remove cooked chicken and onion from the grill and transfer to a cutting board. Let cooked chicken rest 5 minutes before slicing. Serve chicken taco with tortillas, avocados, charred tomatillo salsa verde, cilantro, radishes, and lime wedges.
Slow Cooker Chicken Taco Recipe
Ingredients
- 1 pound (480 g) ground chicken
- 1 large yellow onion, peeled and diced
- 2 bell peppers, cored, seeded and diced
- 1 zucchini, diced
- 2 tablespoons taco seasoning
- 8 oz (240 ml) diced tomatoes with green chilies
- 1/2 cup (125 ml) shredded Cheddar cheese
- chopped fresh cilantro
Method
Step 1
In 4-6-quart (4-6 l) slow cooker, combine diced vegetables, ground chicken, and taco seasoning. Stir well.
Step 2
Cover the pot and cook on low-heat setting for 4 hours or until chicken is cookd through.
Step 3
Turn off the slow cooker and open the lid. Stir chicken mixture well before serving.
Step 4
Top with shredded Cheddar cheese. Sprinkle with chopped fresh cilantro. Serve immediately.
