Slow Cooker Cuban Mojo Pork Recipe
Ingredients
- 4 pounds (2 kg) bone-in pork shoulder
- 1½ teaspoons salt
- 1 teaspoon freshly ground black pepper
- 1/2 cup (125 ml) freshly squeezed lime juice
- 3/4 cup (180 ml) freshly squeezed orange juice
- zest of 1 orange
- zest of 1 lime
- 1/2 cup (125 ml) olive oil
- 8 cloves garlic, peeled and finely chopped
- 2 teaspoons dried oregano
- 2 teaspoons ground cumin
- 1/4 cup chopped fresh cilantro
Method
Step 1
Using a sharp knife, make a few slits all over the surface of the pork shoulder. Set aside.
Step 2
In 6-quart (6 L) slow cooker, combine the remaining ingredients. Mix well. Top with pork shoulder.
Step 3
Close the pot and cook on low-heat setting for 8-10 hours or until the meat is almost tender.
Step 4
Turn off the slow cooker and open the lid. Using tongs, carefully remove cooked pork from the cooker, reserveng the cooking liquid. Transfer the meat onto an aluminum foil-lined baking sheet.
Step 5
Preheat an oven to 400 F (200 C) Bake in preheated oven for 15-20 minutes or until browned.
Step 6
Remove browned pork from the oven and set aside for 10 minutes. Pour reserved cooking liquid over and serve hot.
