Slow Cooker Easy Chicken Barley Soup Recipe
Ingredients
- 1 yellow onion, peeled and diced
- 1 garlic clove, peeled and minced
- 1 tablespoon tomato paste
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 cup diced celery
- 1 carrot, peeled and cubed
- 1/2 cup adlay or pearl barley
- 1Β½ pounds uncooked chicken breasts
- 3Β½ cups (865 ml) chicken broth
- 14 oz (420 ml) diced tomatoes, undrained
- 3/4 teaspoon salt
- 1 bay leaf
- 1/4 teaspoon freshly ground black pepper
Method
Step 1
In a microwave-safe bowl, combine diced yellow onion, minced garlic, tomato paste, olive oil, dried basil, celery, and carrots. Stir well and microwave for about 4-5 minutes, stirring every minute.
Step 2
Remove the cooked mixture from the microwave and transfer it to a 6-quart (6 L) slow cooker. Add the remaining ingredients and stir well.
Step 3
Cover the pot and cook on low-heat setting for 4-6 hours or until barley is cooked through.
Step 4
Turn off the slow cooker and open the lid. Remove cooked chicken and transfer to a cutting board. Cut in bite-size. Return to the cooker. Stir chicken barley soup well before serving.
Step 5
Ladle the soup into soup bowls. Serve hot.
