Slow Cooker Country Beef Stew Recipe
Serve this delicious beef stew over cooked noodles or rice.

Ingredients: 2 pounds (960 g) lean beef stew meat, cut into cubes, 1 cup (250 ml) low-sodium beef broth, 1 cup cubed parsnips, 1 cup chopped yellow onion, and 1 cup chopped fresh celery, 1/2 cup (125 ml) dry red wine, 2 cups cubed unpeeled red potato, 2 cups thickly sliced carrots, 3 cloves garlic, peeled and minced, 2 tablespoons tomato paste, 1/2 teaspoon dried thyme leaves, 1/2 teaspoon dried rosemary leaves, 1 bay leaf,1/2 cup frozen peas, thawed and drained, 2 tablespoons cornstarch, 1/4 cup (60 ml) cold water, salt, and freshly ground black pepper, to taste
Instructions: In a 6-quart (6 l) slow cooker, combine all ingredients, except peas, cornstarch, water, and seasoning. Cover the cooker and cook on a high-heat setting for 4-5 hours. Stir in thawed peas and cook for a further 10 minutes, then stir in combined cornstarch and water. Cook, stirring, for 2-3 minutes.
Turn off the slow cooker. Open the lid and discard the bay leaf. Season to taste with salt and black pepper. Serve with cooked noodles or rice.

Instructions: In a 6-quart (6 L) slow cooker, combine all ingredients, except seasoning. Cover the cooker and cook on a low-heat setting for 6-8 hours. Turn off the slow cooker. open the lid. season beef stew with salt and black pepper. Stir well. Ladle beef stew into large soup bowls. Serve hot.

In a 6-quart (6l) slow cooker, combine all ingredients, except seasoning and peas. Cover and cook on low-heat setting for 6-8 hours, adding peas in the last 30 minutes.
