How to Prepare Slow Cooker Herbed Beef Pot Roast Recipe

Makes 4 servings:


Ingredients: 3-4 pounds (2-2.5 kg) beef pot roast, 3 cups (750 ml) homemade reduced-sodium fat-free beef broth, 1 cube beef broth, 2 cups (500 ml) baby carrots, 1 large yellow onion, 1 sprig fresh rosemary, 2 sprigs each: fresh thyme and fresh oregano, 3 cloves garlic, 1/2 cup (125 ml0 balsamic vinegar, 1 tablespoon salt

Instructions: Peel and chop the yellow onion, then set aside. Peel and mince garlic cloves. Crush the beef cube.

Grease 4-6-quart (4-6 L) slow cooker with nonstick cooking spray. Place all ingredients in the greased pot. Close cooker and cook on low-heat setting for 8-10 hours or until meat and vegetables are cooked through.

Turn off the slow cooker and open the lid. Using tongs, remove cooked beef pot roast from the cooker. Transfer to a large plate. Using two forks, shred the meat. remove cooked from the slow cooker and place on top of shredded beef. Stir well.

Serve herbed beef pot roast over mashed potato. Enjoy!

  • 2 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • 3 cloves garlic, peeled and minced
  • 1/2 cup (125 ml) balsamic vinegar
  • 1 tablespoon sea salt

Method

Step 1

Lightly grease a slow cooker with nonstick cooking spray.

Step 2

Place all ingredients in the greased slow cooker. Cover cooker and cook on low-heat setting for 8-10 hours.

Step 3

Turn off slow cooker and open the lid. Remove cooked beef from the cooker and transfer to a serving platter. Shred with two forks.

Step 4

Remove cooked vegetables from the slow cooker and place on top of shredded beef. Stir well. Serve over mashed potato or cooked white rice.
