Ingredients

  • 2 pounds (960 g) pork shoulder roast,boneless,fat trimmed
  • 1 teaspoon fennel seeds,crushed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano,crushed
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound (480 g) sweet potatoes,peeled and cut into 1-inch(2.5 cm) pieces
  • 1 cup (250 ml) reduced-sodium chicken broth
  • fresh Italian parsley

Method

Step 1

In a small mixing bowl, combine fennel seeds, garlic powder, oregano, paprika, salt, and black pepper. Mix well and rub the meat with your fingers.

Step 2

Place sweet potatoes in a slow cooker. Top with rubbed pork and pour over chicken broth.

Step 3

Cover slow cooker and cook on low-heat setting for8-10 hours.

Step 4

Remove cooked meat from the slow cooker and slice it. Using a slotted spoon, remove cooked potatoes, reserving the cooking liquid.
