Slow Cooker Keto Broccoli Cheese Soup Recipe
Ingredients
- 2 cups (500 ml) water
- 2 cups (500 ml) low-sodium chicken broth, heated in microwave
- 5 cups fresh broccoli florets, cut into small pieces
- 8 oz (240 g) softened cream cheese
- 1 cup (250 ml) whipped cream
- 1/2 cup shredded Parmesan cheese
- 2Β½ cups shredded Cheddar cheese
- 2 tablespoons softened unsalted butter
- dried thyme
- salt and freshly ground black pepper, to taste
Method
Step 1
In a 6-quart (6 l) slow cooker, combine softened butter, cream cheese, whipped cream, chicken broth, and water. Mix well. Add shredded Parmesan cheese and stir again. Stir in chopped broccoli and thyme.
Step 2
Cover the pot and cook on low-heat setting for 3 hours.
Step 3
Turn off the cooker and open the lid. Stir the soup well, then add shredded Cheddar cheese. Mix a few times, allowing the cheese to melt. Season to taste with salt and black pepper. Serve hot.
