I just love how little time it takes to prepare! All you do is soften the ginger and garlic in a little butter, then combine that with the lamb (no need to even brown it first!), sweet potatoes, curry powder, turmeric, salt, and pepper. Add some coconut milk and chicken broth and that’s it!

I also love how slow cooking brings out the best flavor in food and makes cheaper cuts of meat tender. To make this curry, all you have to do is steam some rice or get it from a Chinese restaurant. It’s that easy!
What Cut of Lamb Should I Use for This Stew?
When you go to the store, you may notice big, cheap pieces of beef, lamb, and pork. Don’t try cooking those cuts of meat by roasting or frying them, because they get tough and chewy. But these pieces of meat are perfect for making a delicious stew. The beef and pork come from the shoulder or legs, which are full of collagen.

About Curry Powder
There are lots of different brands of curry powder to choose from and they all have different tastes and flavors. Some typical ingredients in curry powder are turmeric, chilies, coriander, ginger, cumin, cardamom, and curry leaf. You can try different kinds to see which one you like best.
I like Madras curry powder because it has a bit of heat and makes dishes taste toasty. If you don’t like spicy food, you can try mild curry powder instead.
How to Make Lamb and Sweet Potato Curry Stew in a Slow Cooker
Ingredients:
- unsalted butter
- ginger
- garlic
- lamb shoulder
- sweet potatoes
- curry powder
- salt and black pepper
- coconut milk
- chicken broth
- cilantro
Method:
Melt some butter in a small pan over medium-high heat. Add ginger and garlic. Cook, stirring often, until it’s soft and lightly browned. This will take about 3 minutes.
Put the mix into a big bowl. Add pieces of lamb, sweet potatoes, curry powder, turmeric, 2 teaspoons of salt, and 1 teaspoon of pepper. Mix it all up. Cover with cling wrap and keep in the fridge overnight.
Put the mix into your slow cooker. Put coconut milk and stock into the slow cooker.
Cover and set to Low. Let it cook for 7-8 hours (or High for 4-5 hours). When the meat and sweet potatoes are ready, season the curry with salt and pepper. Serve with cilantro, steamed rice, and lime wedges. Enjoy!

Ingredients
- 2 tablespoons unsalted butter
- 2 tablespoons minced ginger
- 4 garlic cloves, peeled and minced
- 2 pounds (960 g) boneless lamb shoulder, trimmed and cubed
- 2medium sweet potatoes, peeled and cubed
- 1½ tablespoons Madras curry powder
- 1 teaspoon ground turmeric
- kosher salt
- freshly ground black pepper
- 15 oz (450 ml) can unsweetened coconut milk
- 1 cup (250 ml) low-sodium chicken broth
- chopped fresh cilantro
- steamed rice
Method
Step 1
Melt the butter in a small skillet over medium-high heat. Put the ginger and garlic in and cook until it's softer and lightly browned, about 3 minutes. Transfer the mixture to a big bowl. Add the lamb, sweet potatoes, curry powder, turmeric, 2 teaspoons of salt and 1 teaspoon of pepper and mix together. Cover and put in the fridge overnight.
Step 2
Remove the lamb mixture from the refrigerator and transfer it to a slow cooker. Pour in the coconut milk and chicken broth. Mix well.
Step 3
Cover the pot and cook on a low-heat setting fro 7-8 hours, or until the lamb and potatoes are tender.
Step 4
Turn off the cooker and open the lid. Stir the stew well before serving. Ladle it into bowls. Serve with steamed rice and chopped fresh cilantro.
