Ingredients

  • 4 cups (1 L) clam juice
  • 1½ pounds (720 ml) canned oysters, liquor reserved
  • 2/3 cup chopped yellow onion
  • 1/2 cup (125 ml) dry white wine
  • 2 tablespoons cornstarch
  • salt anfd cayenne pepper, to taste

Method

Step 1

In a 6-quart (6 L) slow cooker, combine clam juice, reserved oyster liquor, and onion. Mix well.

Step 2

Cover the pot and cook in a high-heat setting for 2-3 hours. Open the lid and stir in combined wine and cornstarch. Recover the cooker and cook for a further 15 minutes.

Step 3

Season to taste with salt and cayenne pepper. Ladle the soup into soup bowls. Serve hot.
