Slow Cooker Raspberried Chicken Drumsticks Recipe
- 3 chicken drumsticks, rinsed and patted dry
- 3 tablespoons soy sauce
- 1/3 cup (80 ml) raspberry jam
- 1 teaspoon prepared mustard
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- toasted sesame seeds
- chopped green onions
In a small mixing bowl, combine soy sauce, mustard, jam, and black pepper. Mix well. Brush soy mixture on chicken.
Place chicken in a slow cooker. Pour the remaining soy mixture over chicken drumsticks. Cover slow cooker and cook on low-heat setting for 5-6 hours or until drumsticks are tender.
Remove cooked chicken from the slow cooker. transfer to the serving platter and keep warm.
Switch slow cooker to high. In a small mixing bowl, combine cornstarch and cold water. Stir until cornstarch dissolved. Stir cornstarch mixture into cooking juices in the slow cooker.
Cook, uncovered, on a high-heat setting, stirring occasionally for 10-15 minutes or until the sauce thickened. Spoon over chicken drumsticks.
Sprinkle with toasted sesame seeds and chopped green onions. Serve warm.
