Slow Cooker Roast Whole Chicken with Cranberry-Orange Relish

The Cranberry-Orange Relish can be made in advance and refrigerate for several weeks.

makes 6 servings

Ingredients: 1 whole chicken, paprika, salt and freshly ground black pepper, 1/2 cup (125 ml) chicken broth, 1½ cups (375 ml) Cranberry-Orange relish (see recipe below)


Instructions: Make foil handles and fit into slow cooker. Sprinkle chicken with salt, black pepper, and paprika. Insert meat thermometer so tip is in the thickest part of inside thigh (do not touch bone!). Place seasoned whole chicken in the slow cooker. Pour in chicken broth.

Cover slow cooker and cook on low-heat setting for 4-5 hours or until thermometer registers 175º F (80º C). Turn off slow cooker and open the lid. Using foil handles, remove cooked chicken from slow cooker and transfer on serving platter. Cover loosely with aluminum foil and keep warm.

Reserve chicken broth for soup or another use. Carve the chicken and serve with Cranberry-Orange Relish.

Cranberry-Orange Relish Recipe

Makes about 4 cups (2 L)

Ingredients: 5 large navel oranges, 1 cup (250 ml) water, 3 cups (750 ml) granulated sugar, divided, 12 oz (360 g) package cranberries, 1/2 cup (125 ml) coarsely chopped walnuts

Instructions: Grate zest from 3 oranges and reserve. Peel oranges and cut into sections.

In a slow cooker, combine all ingredients. Mix well. Cover and cook on low-heat setting for 6-7 hours. Turn off slow cooker and open the lid. Pour cranberry mixture into large dip bowls and set aside. Allow cooling completely. Cover and refrigerate until ready to use.

Slow Cooker Roast Whole Chicken Recipe

Ingredients

  • 1 whole chicken
  • paprika
  • salt and freshly ground black pepper
  • 1/2 cup (125 ml) chicken broth
  • 1/4 cup all-purpose flour
  • 1/2 cup (125 ml) cold water
  • salt and freshly ground black pepper, to taste
  • mashed potatoes (see recipe below)
  • For Mashed Potatoes: 2 pounds (960 g) Idaho potatoes, peeled, cooked, warm
  • 1/3 cup (80 ml) 2% reduced-fat milk
  • 1/3 cup (80 ml) sour cream
  • salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter

Method

Step 1

Make foil handles and fit into 6-quart (6 L) slow cooker.

Step 2

Sprinkle whole chicken lightly with salt, black pepper, and paprika. Insert meat thermometer so tip is in the thickest part of inside thigh (do not touch bone).

Step 3

Place seasoned chicken in slow cooker. Pour in chicken broth. Cover and cook on low-heat setting for 4-5 hours or until thermometer regosters 175 F (80 C).

Step 4

Turn off slow cooker and open the lid. Remove cooked chicken, using foil handles. Place on carving board and cover loosely with foil.

Step 5

Pour chicken broth into measuring cup. Spoon off fat. Add 2 cups (500 ml) chicken broth to a small saucepan. Bring to a boil over high heat. Whisk in combined flour and water, whisking until thickened, about 1 minute. Season to taste with salt and black pepper.

Step 6

Carve cooked chicken and serve with Mashed Potatoes and gravy.

Step 7

To make Mashed Potatoes: mash cooked potatoes or beat until smooth, adding milk, sour cream, and unsalted butter. Season to taste with salt and black pepper. Stir well.
