Slow Cooker Salmon Loaf with Cucumber Dill Sauce Recipe

Ingredients

  • 7 ½ oz (225 ml) can salmon, drained
  • 1 cup whole-wheat breadcrumds
  • 1/4 cup chopped green onions
  • 1/4 cup (60 ml) milk
  • 1 large egg, beaten
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons capers
  • 1 tablespoon dried dill weed
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • cucumber sauce (recipe follows)
  • For Cucumber Dill Sauce:
  • 1/2 cup (125 ml) low-fat plain yogurt
  • 1/2 cup chopped cucumber
  • 1/2 teaspoon dill weed
  • salt and ground white pepper to taste

Method

Step 1

Make aluminum foil handles and fit them into the slow cooker. In a slow cooker, combine all ingredients, except Cucumber sauce. Form into a loaf in the bottom of the slow cooker.

Step 2
