Slow Cooker Saucy Baked Beans Recipe

This recipe is designed for a 4-quart (4 L) slow cooker.

Ingredients

  • 1 pound (480 g) dry navy beans
  • 8 cups (2 L) cold water
  • 1 cup chopped yellow onion
  • 1/4 pouns (120 g) cooked bacon, crumbled
  • 1ΒΌ cups (310 ml) water
  • 1/4 cup brown sugar
  • 1/4 cup (60 ml) molasses
  • 1/4 cup (60 ml) Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1/4 teaspoon freshly ground black pepper

Method

Step 1

Rinse dried beans under cold running water. Drain well.

Step 2

In a Dutch oven, combine beans and 8 cups (2 L) water. Bring to a boil over high heat. Once boiled, reduce heat to low and simmer for 2 minutes.

Step 3

Remove cooked beans from the oven. Cover and allow staying for 1 hour. Drain and rinse.

Step 4

In the same oven, combine beans and 8 cups (2 L) fresh water. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until beans are tender, stirring occasionally. Drain well.

Step 5

In a 4-quart (4 L) slow cooker, combine drained beans, chopped onion, and bacon. Stir well. Add remaining ingredients and mix well to combine.

Step 6

Cover the pot. Cook on low-heat setting for 8-10 hours.

Step 7

Turn off the cooker and open the lid. Stir saucy baked beans well before serving.
