Slow cooker sausage and vegetable stew recipe. So easy and very delicious stew cooked in a slow cooker. First, Italian sausages browned in a skillet, then simmered together with vegetables in a crockpot.

Slow Cooker Sausage and Vegetable Stew Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 pound (480 g) Italian sausages
  • 1 yellow onion, peeled and chopped
  • 4 cloves garlic, peeled and minced
  • 28 oz (840 ml) can unsalted diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1 red bell pepper, cored and cut into bite-size pieces

Method

Step 1

In a large nonstick skillet, heat olive oil over medium-high heat. Add sausages and cook until evenly browned, turning occasionally.

Step 2

Grease a 6-quart (6 L) with nonstick cooking spray. Transfer browned sausages to the greased pan, reserving drippings in the skillet.

Step 3

Add chopped onion to the skillet and cook, stirring occasionally, for about 5 minutes or until softened. Stir in minced garlic, tomatoes, and seasoning. Bring to the tomato mixture to a boil.

Step 4

Remove vegetable mixture from the boil and pour over sausages in the slow cooker. Cover the pot and cook on low-heat setting for 6-7 hours, adding red bell pepper during the last 1 hour.

Step 5

Turn off the slow cooker and open the lid. Stir sausage and vegetable stew well before serving. Transfer to serving bowls. Garnish with fresh basil leaves. Serve hot.
