Slow Cooker Sausage, Potato, and Bell Pepper Stew Recipe
Another easy and delicious slow cooker sausage vegetable recipe.
makes 4 servings
Ingredients: 8-12 oz (240-360 g) smoked turkey sausage, thinly sliced, 3/4 cup (180 ml) low-sodium fat-free chicken broth, 4 cups (1 L) thinly peeled and thinly sliced red potatoes, 3 cups (750 ml) thinly sliced mixed red, green, and yellow bell peppers, 1 cup (250 ml) thinly sliced yellow onion, 1/2 cup (125 ml) quartered sun-dried tomatoes (not in oil), 1 teaspoon (5 ml) dried thyme, 1 teaspoon (5 ml) dried marjoram leaves, 1-2 tablespoons (15-30 ml) cornstarch, 1/4 cup (60 ml) cold water, salt and freshly ground black pepper, to taste
Instructions: In a 4-6-quart (4-6 L) slow cooker, combine all ingredients, except cornstarch, water, and seasoning. Mix well. Cover the pot and cook on a high-heat setting for 4-5 hours.
Open the lid and stir in combined cornstarch and water, continue cooking and stirring for a further 2-3 minutes.
Turn off the slow cooker. Season slow cooker sausage vegetable stew with salt and black pepper, then transfer to serving bowls. Serve it hot with crusty bread.
Slow Cooker Sausage Vegetable Recipe
- 28 oz (840 ml) can tomato puree
- 2 garlic cloves, peeled and minced
- 2 teaspoons granulated sugar
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper
- 1/4 teaspoon dried crushed red pepper
- 2 pounds (960 g) mild Italian sausages
- 2 medium green bell peppers, halved, cored and sliced
- 1 medium yellow bell pepper, halved, cored and sliced
- 1 large sweet onion, peeled and sliced
- 1/4 cup (60 ml) sliced fresh basil leaves
In a large mixing bowl, combine tomato puree, garlic, sugar, oregano, seasoning, and crushed red pepper. Stir well.
Add the tomato mixture, Italian sausages, and onion to the slow cooker. Stir until the sausage mixture is coated with sauce.
Cover the pot and cook on a low-heat setting for 7-8 hours.
Turn off the slow cooker and open the lid. Stir in sliced fresh basil leaves before serving.
Transfer to serving plates. Serve over cooked pasta.
