Ingredients
- 1 pound (480 g) Italian-style turkey sausages, sliced
- 14½ oz (435 ml) can Italian plum tomatoes,undrained
- 1 cup (250 ml) low-sodium chicken broth
- 2 small yellow onions, peeled and cut into wedges
- 1 tablespoon chopped garlic
- half of small jalapeno chili, sliced
- 1 yellow bell pepper, cored and sliced
- 1½ teaspoons Italian seasoning
- 1/8 teaspoon crushed red pepper
- 1 red bell pepper, cored and thinly sliced
- 1 green bell pepper, cored and thinly sliced
- salt and freshly ground black pepper
- 1 oz (30 g) shredded Parmesan cheese
Method
Step 1
In a slow cooker, combine all ingredients, except bell peppers, salt, and black pepper Mix well.
Step 2
Cover the cooker and cook on a high-heat setting for 4-5 hours, adding sliced bell peppers during the last 20 minutes.
Step 3
Turn off the slow cooker. Season sausage stew with salt and black pepper. Stir well.
Step 4
Transfer to a serving platter. Sprinkle with shredded Parmesan cheese (optional). Serve hot.
