Slow Cooker Traditional Beef Fajitas Recipe
Ingredients
- 1 1/2 pounds (720 g) beef flank steak, cut into strips
- 1 cup chopped yellow onion
- 1 large green bell pepper, cored and cut into strips
- 1 large yellow bell pepper, cored and cut into strips
- 1 large red bell pepper, cored and cut into strips
- 1 tablespoon chopped fresh cilantro
- 1 1/2 teaspoons minced garlic
- 1 1/2 teaspoons chili powder
Method
Step 1
Grease inside the slow cooker with nonstick cooking spray.
Step 2
In the greased slow cooker, combine steak, onion, bell peppers, cilantro, garlic, chili powder, and coriander. Stir well.
Step 3
Cover the pot and cook on low-heat setting for 8-10 hours or until beef and vegetables are tender.
Step 4
Turn off the slow cooker and open the lid. Remove cooked and vegetables from the pot and transfer to a serving plate.
Step 5
Preheat an oven to 350 F (175 C) Wrap tortillas in an aluminum foil and place in the preheated oven. Warm them for 10-15 minutes. Using a slotted spoon, fill warm tortillas with a meat-vegetable mixture. Garnish with shredded cheese and salsa, if desired.
