Slow cooker vegetarian vichyssoise soup recipe. A very easy and tasty vegetable soup cooked in a slow cooker. This is a classic French potato soup usually served chilled, but it is good a warm, just try to cook it!

Serve this vegetarian soup with croutons or roasted red pepper swirl (recipe follows)

Roasted Red Pepper Swirl

makes about 3/4 cup (180 ml)

Ingredients: 3/4 cup (180 ml0 roasted red peppers, 1/2 small pickled jalapeno chili, 1 clove garlic, peeled, 2 teaspoons (10 ml) balsamic vinegar, 2 oz (60 ml) water

Instructions: In a blender or food processor, combine all ingredients, except water. Blend until smooth. Add water and stir well.

Slow Cooker Vegetarian Vichyssoise Soup Recipe

Ingredients

  • 6 cups (1.5 L) reduced-sodium vegetable broth
  • 2 pounds (960 g) potatoes, peeled and cubed
  • 3/4 cup sliced leeks
  • 3/4 cup sliced celery
  • salt and freshly ground white pepper, to taste
  • croutons, for garnish

Method

Step 1

In a 4-6-quart (4-6 L) slow cooker, combine all ingredients, except seasoning. Cover the pot and cook on high-heat setting for 4-5 hours.

Step 2

Turn off the cooker and open the lid. Transfer the soup into a blender or food processor. Process until smooth, then season to taste with salt and black pepper.

Step 3

Ladle itno soup bowls and serve warm or refrigerate and serve chilled.
