Stewed beef tongue recipe (slow cooker). This recipe also is known as “Lengua”- beef tongue with vegetables cooked in a slow cooker. The beef tongue has a mild taste, so add as many aromatics to the pot, as you wish, starting from black peppercorns, crushed garlic, and bay leaf. Also, you can use fresh or dried herbs.
This recipe contains vegetables, such as onions and carrots. I used water to cover the meat and vegetables, but you can substitute it for low-sodium beef broth or even dry red wine if you decide to cook it without vegetables.
There are too many options to cook tongues-from an electric pressure to a large saucepan. Also, you can braise it, sear or simmer it. To braise it, simply trim off the gristle and cartilage from the tongue, then cut out the U-shaped hyoid bone at the base. Make a 1-inch (2.5 cm)-long slice through the center of the base of the tongue.
Place the tongue in a large saucepan and cover it with water, beef broth, or dry red wine. Boil over medium-high heat for 15 minutes, skimming the froth from the surface as needed. Remove from the heat and drain it.

Stewed Beef Tongue Recipe (Slow Cooker)
Ingredients
- 1 beef tongue
- 1/2 yellow onion, peeled and chopped
- 1 large carrot, peeled and chunked
- 2 cloves garlic, peeled
- 1 bay leaf
- salt and freshly ground black pepper, to taste
- water or beef broth to cover the tongue
- 1 tablespoon butter (optional)
Method
Step 1
In a 6-quart (6 L) slow cooker, combine beef tongue, onion, carrots, garlic, and bay leaf. Season with salt and black pepper. Pour in enough water or beef broth to cover tongue and vegetables.
Step 2
Cover the pot and cook on low-heat setting for 8 hours or until meat and vegetables are tender.
Step 3
Turn off the slow cooker and open the lid. Discard the bay leaf. Transfer cooked beef tongue to a cutting board. Cool slightly.
Step 4
Peel outer layer of skin from beef tongue and remove rough end. Slice the meat. Add cooked vegetables. Serve hot.
Step 5
You can also fry it in a large nonstick skillet. Just melt butter over medium-high heat, then add sliced tongue and brown on all sides, stirring occasionally, for 5-10 minutes.
