Strawberry-Coconut Cocktail Recipe

Ingredients

  • 1 cup (250 ml ) freshly squeezed lemon juice
  • 1 cup (250 ml) water
  • 1½ cups (370 g) granulated sugar
  • 2 cups fresh strawberries
  • 1 can coconut milk

Method

Step 1

In a saucepan, combine lemon juice, water, and sugar. Stirring, bring to a boil. When sugar completely dissolved, remove from the heat. Set aside and allow to cool.

Step 2

In a blender, combine the lemon mixture, fresh strawberries, and coconut milk. Blend until smooth.

Step 3

Run the mixture through a fine-mesh sieve, Discard the strawberry seeds.

Step 4

Pour strawberry-coconut mixture in the pitcher. Add cubed ice and cold water to taste.
