Ingredients
- zest of 1 lime
- freshly squeezed juice of 1 lime
- 1 teaspoon grated ginger
- 2 tablespoons clear honey
- 2 tablespoons tequila
- half of jalapeno pepper,thinly sliced
- 1 teaspoon kosher salt
- 1/2 teaspoon cracked black pepper
- 3 tablespoons olive oil
- 2 tablespoons freshly chopped cilantro leaves
- 1 pound (480 g) pork tenderloin
Method
Step 1
In a small mixing bowl,combine lime zest,juice and grated ginger.Stir well. Add remaining ingredients,except pork tenderloin and stir well to combine.
Step 2
Place meat into zip top bag. Pour tequila marinade over. Seal zip top bag tightly and refrigerate for 1-4 hours.
Step 3
Remove bag from the refrigerator 15 minutes before cooking. Drain the marinade. Place marinated pork tenderloin on a baking sheet.
Step 4
Preheat a grill to 450 F (225 C). Place marinated meat onto preheated grill and sear on one side for 5-6 minutes. Turn meat over and continue cooking for a further 5-6 minutes.
Step 5
Remove cooked pork tenderloin from the heat and transfer to cutting board. Cover pork with aluminum foil and set aside for 5 minutes.
Step 6
Slice tequila marinated pork tenderloin into 1/2 inch (1.25 cm) slices. Serve with spicy tropical salsa.
