How to Make Traditional Vietnamese Fried Rice Recipe:

Makes 2 servings

Ingredients: 3 cups (750 ml) cooked white rice, one large egg and one egg yolk, 1/2 pound (240 g) sausages, 5 oz (150 ml) can of mixed sweetcorn, peas, and paprika, 2-3 shallots, soy sauce, oyster sauce, or fish sauce, 3 tablespoons (45 ml) olive oil

Instructions: Transfer sausages to a cutting board and slice them into thin slices. Set aside. Drain canned mixed sweetcorn, peas, and paprika. Wash shallots under cold running water, then peel and slice them into small pieces.

Place cooked white rice in a medium bowl. Beat the egg, then add egg yolk, 1 tablespoon (15 ml) soy, and oyster sauce. Beat well.

In a large nonstick skillet, heat olive oil over high heat. Add sliced or chopped shallots and fry, stirring occasionally, for about 1 minute or until aromatic. Stir in the cooked white recipe and continue frying until rice is tender, for further 2-3 minutes. Add sliced sausages and continue stir-frying until the sausages are cooked through, for about 3-4 minutes.

Add drained mixed vegetables and mix well with the rice mixture. Cook, stirring, for an additional minute or so. Add more soy sauce, fish sauce, or oyster sauce to taste, if needed.

Remove the skillet from the heat. Transfer Vietnamese fried rice to serving plates. Serve hot.
