Ingredients
- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1 large egg, beaten
- 2 tablespoons paancake syrup, plus 2 teaspoons
- 2 tablespoons melted unsalted buter, plus 2 teaspoons
- 3/4cup (180 ml) unsweetened applesauce
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped walnuts
- 1/4 cup diced apples
Method
Step 1
In a large mixing bowl, combine all dry ingredients. Stir well and set aside.
Step 2
In a small mixing bowl, combine beaten egg, pancake syrup, melted butter, applesauce, and vanilla extract. Mix well.
Step 3
Pour egg mixture into dry ingredients. Stir just until moistened. Mix in chopped walnuts and diced apples.
Step 4
Divide the batter among 8 parchment paper-lined muffin cups.
Step 5
Preheat your air fryer to 400 F (200 C) for 5 minutes. Place 4 muffin cups in the preheated fryer. Air fry at 330 F (165 C) for 10 minutes or until a toothpick inserted in the center comes out clean. Repeat with remaining muffins. Serve warm.
