Ingredients

  • 1/2 cup Panko breadcrumbs
  • 1 large egg, beaten
  • 1 egg white
  • 1 tablespoon mayonnaise
  • 1/4 cup finely diced celery and red bell pepper
  • 1 teaspoon Dijon mustard
  • 1/4 cup minced fresh parsley
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon Old Bay seasoning
  • 1/8 teaspoon sweet paprika
  • 1/8 teaspoon kosher salt
  • freshly ground black pepper, to taste
  • 10oz (300 g) lump crab meat
  • To Make Cajum Mayo
  • 1/4 cup (60 ml) mayonnaise
  • 1 tablespoon minced dill pickle
  • 1 teaspoon freshly squeezed lemon juice
  • 3/4 teaspoon Cajun seasoning
  • For Serving:
  • 4 lettuce leaves
  • 4 whole toasted buns
  • fresh arugula leaves
  • fresh red leaf lettuce

Method

Step 1

To make crab cakes: In a large mixing bowl, combine all crab cakes ingredients, except crab meat. Mix well. Fold in the crab meat, then gently shape 4 round patties, 3/4 inch thick. Spray both sides with olive oil spray.

Step 2

Preheat your air fryer to 400 F (200 C) for 5 minutes. Working in batches, place crab cakes in the air fryer basket. Fry at 370 F (185 C) for 10 minutes, flipping halfway through, or until the edges are golden.

Step 3

Meanwhile, make the sauce: In a small mixing bowl, combine all sauce ingredients. Mix well and set aside.

Step 4

To serve, place arugula and lettuce leaves on each toasted bun half. Top with crab cake and a generous tablespoon of cajun mayo. Add the bun top. Serve hot.
