Ingredients
- 2 cups mashed potatoes
- 1 cup shredded Cheddar cheese
- 1 green onion, chopped (optional)))
- 2 strips bacon, chopped
- 1 large egg, beaten
- 2 tablespoons all-purpose flour
- 1 cup Panko breadcrumbs
- salt and freshly ground black pepper, to taste
Method
Step 1
In a large mixing bowl, combine mashed potatoes, egg, cheese, bacon, green onions (if using), and all-purpose flour. Mix well and make into patty form.
Step 2
Place breadcrumbs in a shallow bowl. Coat potato patty in breadcrumbs. Freeze for 10 minutes.
Step 3
Place an aluminum foil in the air fryer basket. Fry at 390 F (195 C0 for 10 minutes. Flip over and fry for a further 5 minutes. Serve hot or warm.
