The Best Instant Pot Mashed Potatoes

Ingredients

  • 2 pounds (960 g) lean ground beef
  • 1/2 cup panko breadcrumbs
  • 1/3 cup (80 ml) whole milk
  • 1 small yellow onion, peeled and grated
  • 1 large egg, lightly beaten
  • 1 teaspoon kosher salt
  • 1/4 cup (60 ml) ketchup
  • 2 tablespoons brown sugar
  • 2 tablespoons Dijon mustard
  • 2 pounds (960 g) Yukon potatoes, peeled and quartered
  • 2 cups (500 ml) water
  • 1/2 teaspoon kosher salt
  • 1 cup (250 ml) half-and-half
  • 4 tablespoons unsalted butter

Method

Step 1

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, grated onion, beaten egg, and salt. Mix well, then shake beef mixture into a loaf, about 6 inches (15 cm) long and 4-inches (10 cm) wide. Place it inside a 6-inch (15 cm) round cake pan. Set aside.

Step 2

In an electric instant pot insert, combine potatoes, water, and salt.

Step 3

Create a sling for the meatloaf pan by folding a 12-inch (25 cm) aluminum foil lengthwise into a 3-inch (7.5 cm) wide strip. Arrange the meatloaf pan in the center of the strip and fold up the sides. Place the meatloaf pan on the instant pot trivet.

Step 4

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 35 minutes.

Step 5

Meanwhile, place the rack in the middle of the oven. Heat to 400 F (200 C). In a small bowl, combine the ketchup, mustard, and brown sugar. Stir well to make a glaze.

Step 6

Using the Natural Release method, bring pressure to normal. Carefully unlock and open the lid. Using the foil sling, remove cooked meatloaf. Drain off the fat and juices.

Step 7

Brush the meatloaf with glaze. Bake in preheated oven for 8-10 minutes.

Step 8

Add the half-and-half and butter to cooked potatoes. Using a masher, mash well. Slice the meatloaf and serve with mashed potatoes.
