Ingredients
- 3 medium bell peppers, cut into halfs diagonally
- 1 tablespoon olive oil
- 2/3 pound (360 g) lean ground turkey
- 1/2 cup cooked brown rice
- 1/4 cup panko breadcrumbs
- 3/4 cup (180 ml) low-carb marinara sauce
- 3 tablespoons finelly chopped parsley
- 1/4 teaspoon freshlu ground black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded Mozzarella cheese
Method
Step 1
Grease the air fryer basket with nonstick cooking spray. Set aside.
Step 2
In a large nonstick skillet, heat the olive oil over medium-high heat. Add ground turkey and cook, stirring occasionally, until browned, for about 4 minutes.
Step 3
Stir in brown rice and breadcrumbs. Continue cooking and stirring occasionally, for a further 1 minute.
Step 4
Remove the skillet from the heat. Stir in marinara sauce, chopped parsley, Parmesan, and black pepper. Divide the mixture evenly among the peppers.
Step 5
Preheat your air fryer to 400 F (200 C) for 5 minutes. Place stuffed pepper in the preheated fryer. Set the tempretute to 350 F (175 C) Set the time for 8 minutes.
Step 6
Open the basket. Top stuffed peppers with shredded Mozzarella cheese. Cook in the air fryer for 2 minutes more or until cheese is melted. Serve hot.
