Oven Baked Mango Chicken Recipe

makes 4 servings

Ingredients: 1 roasting chicken, about 3½-4 pounds (1.7-2 kg), 6 tablespoons unsalted butter, 2 large yellow onions, peeled and thinly sliced, 6 slices fresh or canned mango, grated nutmeg, 3 strips lemon rind, 1¼ cups (310 ml) chicken stock, salt and freshly ground black pepper, freshly squeezed juice of 1 lemon, 1/2 cup (125 ml) cream, dash of paprika

Instructions: Joint the chicken a few hours before cooking so that the back and trimmings can be made into stock. In a large nonstick skillet, fry the chicken in a half of butter until golden brown. Melt the remaining unsalted butter in a saucepan or flameproof casserole. Add sliced onion, and sauté over medium heat, stirring, until golden. Stir in sliced mango, then increase heat to high, and cook for further 3-5 minutes.

Add the fried chicken, dash of grated nutmeg, lemon rind, and chicken stock. Season to taste with salt and black pepper. Preheat the oven to 350º F (175º C). Cook, covered, in preheated oven for 1 hour, or until the chicken is tender. Remove cooked chicken, and transfer to serving plate. Keep warm.

Discard the lemon rind. Pour in the lemon juice and season to taste with salt and black pepper. Stir in the cream and allow coming to a gentle simmer. Pour the sauce over chicken, then sprinkle with paprika. Serve over cooked rice.

Variation: 2-3 peeled, sliced peaches may be used instead of the mango.

  • 4 boneless, skinless chicken breasts,cut into cubes
  • 1 tablespoon unsalted butter
  • 1/4 cup brown sugar
  • 1 can (420 ml) crushed pineapples,drained and juice reserved
  • silvered almonds (optional)
  • sliced green scallions
  • For Marinade:
  • 1 cup (250 ml) pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup (80 ml) light soy sauce


Step 1

Combine all marinade ingredients together and pour over chicken. Chill approximately 10 min.

Step 2

Melt butter in hot skillet and after pour over chicken. Turn until cooked through.

Step 3

Mix brown sugar and pineapple in a small bowl and pour over chicken. Cook until heated through and serve over ice. For garnish, add slivered almonds, red pepper, and green scallions.

      1 cup (250 ml) pineapple juice
      1/2 cup packed brown sugar
      1/3 cup (80 ml) light soy sauce
