How To Cook Perfect Italian Spaghetti

Ingredients: 1 pound (480 g) Italian spaghetti, 6 quarts (6 L) water, 3 tablespoons (45 ml) salt

Instructions: Pour the water into a large pot. Bring to a boil over high heat. Season the water with salt and stir well. Drop in the spaghetti while the water is at a boil and stir gently. Continue cooking, stirring occasionally. Cook until spaghetti is cooked through (al dente).

Drain cooked spaghetti, using a colander, reserving 1 cup (250 ml) of cooking liquid. Add your favorite pasta sauce to the cooked spaghetti and continue cooking in the sauce. Stir the spaghetti well to coat with the sauce.

How to Prepare Spaghetti Sauce


Makes 4 cups (1 L)

Ingredients: 2 medium yellow onions, peeled and chopped, 8 cloves garlic, peeled and minced, 1/4 cup (60 ml) olive oil, 2 (28 oz each (840 ml)) cans whole, stewed tomatoes, 6 oz (180 ml) can tomato paste, 1/2 teaspoon (3 ml) dried oregano, 1 tablespoon (15 ml) dried basil leaves, 2 bay leaves, 1/2 teaspoon (3 ml) dried thyme, salt and freshly ground black pepper, to taste

Instructions: In a medium saucepan, heat the olive oil over medium heat. Add chopped onions and saute until soft, stirring occasionally, about 5 minutes. Stir in minced garlic and saute, stirring, for further 1 minute.

Add tomatoes, tomato paste, oregano, basil, bay leaves, thyme and salt, and black pepper. Stir well and bring tomato mixture to a boil. Reduce heat to low and simmer for 10-15 minutes.

Turn off the heat and remove the pan. Stir well before serving. Pour the spaghetti sauce over cooked Italian spaghetti and serve immediately.

Cooked Spaghetti with Four Cheeses Recipe

Ingredients

  • 8 oz (240 g) package spaghetti
  • 1/4 cup butter or margarine
  • 1 tablespoon all-purpose flour
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Fortina cheese
  • 1/2 cup grated provolone cheese
  • 1/4 cup grated Parmesan or Romano cheese
  • 1/4 teaspoon salt and 1/4 teaspoon cracked black pepper
  • 2 tablespoons chopped parsley

Method

Step 1

Prepare spaghetti as label directs (cook the spaghetti in boiling salted water until tender). Drain well in a colander and keep hot.

Step 2

Meanwhile, in a large saucepan over medium heat, in hot butter, stir in flour until blended and cook 30 seconds. Gradually stir in half-and-half and cook, stirring, until mixture boils and slightly thickens. Stir in mozzarella, Fontina, provolone and Parmesan cheeses, salt, and pepper until smooth and cheeses are melted. Pour hot spaghetti into warm, large bowl. Pour resulting cheese sauce over spaghetti and sprinkle with parsley. Toss until spaghetti is well coated.
