Cranberry Mojitos cocktail.Rum based alcoholic mixed drink.Yummy!
- 1/2 pound (240 g) fresh cranberries
- 1 cup granulated sugar
- 1 cup (250 ml) fresh cold water
- 20 fresh mint leaves
- 2 tablespoons freshly squeezed lemon juice
- 4 oz (120 ml) white rum(Baccardi)
- 4-6 oz (120-160 ml) soda water
- cubed ice
In a medium saucepan,combine cranberries,water and sugar. Mix well and simmer over medium heat for 2-3 minutes.
Reduce heat to medium-low and continue to cook for 10 minutes,before berries start bursting. Remove from the heat,set aside and let cool it. Strain cooled syrup and refrigerate overnight.
Put 10 fresh mint leaves and 1 tablespoon and 1 tablespoon of lime juice in each old fashioned glass. Using a back of wooden spoon,mush the mint up. Place cubed ice in each glass and pour 2 oz (60ml) of cranberry syrup and 2 oz(60 ml) of rum into each glass. Top with soda water and sprinkle with fresh cranberries.
