To Make Strawberry Salsa:
Ingredients: 2 cups diced fresh strawberries, 2 tablespoons finely diced red onions
In a large mixing bowl, combine diced strawberries and red onions. Mix well and set aside. Serve with cooked balsamic pork tenderloin.
Crock Pot Balsamic Pork Tenderloin Recipe
Ingredients
- 1 pound (480 g) pork tenderloin
- 1/2 cup (125 ml) chicken stock
- 1/2 cup (125 ml) balsamic vinegar
- 1/4 cup brown sugar
- 3 cloves garlic, peeled and minced
- half of red onion, peeled and sliced
- 1 large sweet potato, peeled and chunked
Method
Step 1
Place sliced onion in a slow cooker. Top with pork and potato chunks.
Step 2
In a small mixing bowl, combine chicken stock, balsamic vinegar, brown sugar, and garlic. Mix well, then pour balsamic mixture over the pork and sweet potatoes.
Step 3
Cover the cooker and cook on low-heat setting for 6-8 hours or until pork is tender.
Step 4
Turn off the crock pot and opne the lid. Using tongs, remove cooked potatoes and transfer to a serving plate. mash them and set aside.
Step 5
Trabsfer cooked pork to a serving plate. Top with strawberry salsa. Pour the sauce over. Serve with mashed potatoes.
